Classic Shepherd's Pie

Ingredients

  • 1 lb ground lamb or beef
  • 1 large onion, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 4 medium potatoes, peeled and mashed
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste

Steps

  1. 1. Brown ground meat with onion, then drain fat. Add carrots, peas, beef broth, and tomato paste; simmer for 15 minutes. Season.
  2. 2. Prepare mashed potatoes by combining with butter, milk, salt, and pepper.
  3. 3. Spoon meat mixture into an oven-safe dish, then top evenly with mashed potatoes. Create ridges with a fork.
  4. 4. Bake at 375°F (190°C) for 25-30 minutes, or until golden brown and bubbly. Let rest before serving.
