Classic Shepherd's Pie
Ingredients
- 1 lb ground lamb or beef
- 1 large onion, diced
- 2 carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 1 tbsp tomato paste
- 4 medium potatoes, peeled and mashed
- 1/4 cup butter
- 1/4 cup milk
- Salt and pepper to taste
Steps
- 1. Brown ground meat with onion, then drain fat. Add carrots, peas, beef broth, and tomato paste; simmer for 15 minutes. Season.
- 2. Prepare mashed potatoes by combining with butter, milk, salt, and pepper.
- 3. Spoon meat mixture into an oven-safe dish, then top evenly with mashed potatoes. Create ridges with a fork.
- 4. Bake at 375°F (190°C) for 25-30 minutes, or until golden brown and bubbly. Let rest before serving.
