I’m always curious to try new things in the kitchen, and making sushi rolls at home is such a fun challenge. It’s rewarding to see the beautiful results!
Easy Veggie Sushi Rolls
Ingredients
- 2 cups sushi rice, cooked
- 1/4 cup rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 4 sheets nori
- 1/2 cucumber, julienned
- 1 carrot, julienned
- 1/2 avocado, sliced
- Soy sauce for dipping
Steps
- Prepare sushi rice. While warm, mix with rice vinegar, sugar, and salt. Let cool.
- Place a sheet of nori on a bamboo mat. Spread a thin layer of sushi rice over the nori, leaving a border at the top.
- Arrange cucumber, carrot, and avocado strips across the bottom third of the rice.
- Carefully roll the sushi tightly from the bottom, using the mat to help. Seal the edge with a little water.
- Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce.
