Sometimes all I need is something light and fresh to feel completely refreshed. A big, vibrant Greek salad does the trick every time, especially on a warm day!

Classic Greek Salad

Ingredients

  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, crumbled or block
  • Olive oil, red wine vinegar, oregano

Steps

  1. Combine chopped cucumber, tomatoes, and red onion in a bowl.
  2. Add Kalamata olives and feta cheese.
  3. Drizzle generously with olive oil and red wine vinegar.
  4. Sprinkle with dried oregano, salt, and pepper.
  5. Toss gently and serve immediately.
