Colorful Vegan Buddha Bowl

Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted sweet potato cubes
  • 1 cup steamed broccoli florets
  • 1/2 cup chickpeas, roasted or pan-fried
  • 1/4 cup sliced avocado
  • Lemon-tahini dressing

Steps

  1. Prepare quinoa according to package instructions. Roast sweet potatoes until tender.
  2. Steam broccoli until tender-crisp. Roast or pan-fry chickpeas until slightly crispy.
  3. Arrange quinoa, sweet potatoes, broccoli, chickpeas, and avocado in a bowl.
  4. Drizzle generously with lemon-tahini dressing and serve.
