After a long hike, I feel utterly content digging into a crispy schnitzel with a side of potato salad. It’s hearty, satisfying, and just tastes like a well-earned reward.

Classic Pork Schnitzel

Ingredients

  • 2 boneless pork cutlets
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Salt and pepper
  • Vegetable oil for frying

Steps

  1. Pound pork cutlets thin (about 1/4 inch). Season with salt and pepper.
  2. Set up a breading station: flour, beaten egg, then breadcrumbs.
  3. Dredge each cutlet in flour, then egg, then breadcrumbs, pressing gently to coat.
  4. Heat 1/2 inch of oil in a large skillet over medium-high heat. Fry schnitzels for 3-4 minutes per side until golden brown and cooked through.
  5. Serve immediately with a lemon wedge.
