Flavorful Ghanaian Jollof Rice
Ingredients
- 2 cups long-grain rice
- 1/2 cup vegetable oil
- 2 onions, chopped
- 1 bell pepper, diced
- 1 can (400g) crushed tomatoes
- 1/4 cup tomato paste
- 2 cups chicken or vegetable broth
- 1 tbsp curry powder
- 1 tsp dried thyme
- Salt and pepper to taste
Steps
- Wash rice until water runs clear. Heat oil in a large pot, sauté onions and bell pepper until soft. Add crushed tomatoes and tomato paste, cook for 10 minutes.
- Stir in broth, curry powder, thyme, salt, and pepper. Bring to a boil. Add rice, stir once, cover tightly, and reduce heat to low.
- Cook for 30-40 minutes until rice is tender and liquid is absorbed. Let it rest, covered, for 10 minutes before fluffing with a fork.
