After a really long day, I just crave a simple bowl of miso soup. It’s so comforting and easy, exactly what I need to unwind.
Simple Miso Soup
Ingredients
- 4 cups dashi (Japanese soup stock)
- 1/4 cup white miso paste
- 4 oz silken tofu, cubed
- 2 scallions, thinly sliced
- 1 sheet nori, cut into small strips (optional)
Steps
- Heat dashi in a pot over medium heat until simmering. Do not boil.
- Remove a small amount of dashi and dissolve miso paste in it, then return to the pot.
- Add tofu and gently heat through for 2-3 minutes. Do not boil after adding miso.
- Serve immediately, garnished with scallions and nori if desired.
