Quick Miso Ramen
Ingredients
- 4 cups chicken or vegetable broth
- 2 tbsp miso paste
- 1 pack ramen noodles
- 2 soft-boiled eggs
- Scallions, sliced
- Optional: sliced pork or tofu
Steps
- Bring broth to a simmer. In a small bowl, whisk miso paste with a little hot broth until smooth, then stir back into the main broth.
- Cook ramen noodles according to package directions. Drain.
- Divide noodles into two bowls. Pour hot miso broth over the noodles.
- Top each bowl with a soft-boiled egg, sliced scallions, and your choice of protein.
- Serve immediately and enjoy the comforting warmth.
