A quiet bowl of ramen is my go-to when I need to clear my head and think. The complex broth and comforting noodles help me slow down and gather my thoughts. It’s a meditative meal for me.

Quick Miso Ramen

30 minutes • Easy

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tbsp miso paste
  • 1 pack ramen noodles
  • 2 soft-boiled eggs
  • Scallions, sliced
  • Optional: sliced pork or tofu

Steps

  1. Bring broth to a simmer. In a small bowl, whisk miso paste with a little hot broth until smooth, then stir back into the main broth.
  2. Cook ramen noodles according to package directions. Drain.
  3. Divide noodles into two bowls. Pour hot miso broth over the noodles.
  4. Top each bowl with a soft-boiled egg, sliced scallions, and your choice of protein.
  5. Serve immediately and enjoy the comforting warmth.
