When I’m feeling adventurous and want a burst of flavor, I always crave a fiery Thai green curry. It’s a journey for the taste buds with every spoonful!

Vibrant Thai Green Curry (Quick Version)

Ingredients

  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons green curry paste
  • 1 lb chicken breast, sliced
  • 1 cup mixed vegetables (e.g., bell peppers, snap peas)
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Fresh basil leaves for garnish

Steps

  1. Heat 1 tablespoon of coconut milk in a pot over medium heat. Add green curry paste and cook for 1-2 minutes until fragrant.
  2. Add chicken and cook until no longer pink. Stir in remaining coconut milk, fish sauce, and brown sugar.
  3. Bring to a simmer, then add mixed vegetables. Cook for 5-7 minutes until vegetables are tender-crisp.
  4. Serve hot with rice, garnished with fresh basil.
