Basic Chicken Congee
Ingredients
- 1/2 cup white rice
- 6 cups chicken broth
- 1 small chicken breast
- 1-inch ginger, sliced
- Salt to taste
- Green onions for garnish
Steps
- Rinse rice. Combine rice, chicken broth, chicken breast, and ginger slices in a large pot.
- Bring to a boil, then reduce heat to low and simmer, partially covered, for 45-60 minutes, stirring occasionally, until rice breaks down and thickens.
- Remove chicken breast, shred it, and return to the congee. Season with salt.
