On days when I need to clear my head and focus, a spicy bowl of Kimchi Jjigae is my secret weapon. The warmth and bold flavors really sharpen my senses.
Simple Kimchi Jjigae (Kimchi Stew)
Ingredients
- 1.5 cups aged kimchi, chopped
- 1/2 cup pork belly or firm tofu, sliced
- 3 cups anchovy broth or water
- 1/2 onion, sliced
- 1 green onion, sliced
- 1 tbsp gochugaru (Korean chili flakes)
- 1 tsp soy sauce
Steps
- Sauté chopped kimchi and pork belly/tofu in a pot for 5 minutes.
- Add anchovy broth (or water), sliced onion, gochugaru, and soy sauce. Bring to a boil, then reduce heat.
- Simmer for 15-20 minutes, allowing flavors to deepen. Taste and adjust seasoning.
- Stir in sliced green onion just before serving hot with rice.
