On days when I need to clear my head and focus, a spicy bowl of Kimchi Jjigae is my secret weapon. The warmth and bold flavors really sharpen my senses.

Simple Kimchi Jjigae (Kimchi Stew)

Ingredients

  • 1.5 cups aged kimchi, chopped
  • 1/2 cup pork belly or firm tofu, sliced
  • 3 cups anchovy broth or water
  • 1/2 onion, sliced
  • 1 green onion, sliced
  • 1 tbsp gochugaru (Korean chili flakes)
  • 1 tsp soy sauce

Steps

  1. Sauté chopped kimchi and pork belly/tofu in a pot for 5 minutes.
  2. Add anchovy broth (or water), sliced onion, gochugaru, and soy sauce. Bring to a boil, then reduce heat.
  3. Simmer for 15-20 minutes, allowing flavors to deepen. Taste and adjust seasoning.
  4. Stir in sliced green onion just before serving hot with rice.
