On my quiet nights in, when I truly want to relax, I treat myself to fresh sushi. It’s such a delicate and flavorful meal that perfectly complements a calm evening.

Simple Cucumber Avocado Rolls

Ingredients

  • 1 cup sushi rice, cooked
  • 2 sheets nori seaweed
  • 0.5 cucumber, thinly sliced
  • 0.5 avocado, thinly sliced
  • 2 tbsp rice vinegar
  • Soy sauce and wasabi for serving

Steps

  1. Season cooked sushi rice with rice vinegar. Let cool slightly.
  2. Place a sheet of nori on a bamboo mat. Spread a thin layer of rice over 2/3 of the nori, leaving a border.
  3. Arrange cucumber and avocado slices horizontally across the rice.
  4. Carefully roll the nori tightly from the bottom edge using the bamboo mat. Slice into 6-8 pieces. Serve with soy sauce and wasabi.
