On a chilly evening, there’s nothing more comforting than a warm bowl of lentil soup. It makes me feel so cozy and content, especially with a crusty piece of bread.

French Lentil Soup

45 minutes • Easy

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 8-10 minutes.
  2. Stir in rinsed lentils, vegetable broth, and bay leaf. Bring to a boil.
  3. Reduce heat, cover, and simmer for 30-35 minutes, or until lentils are tender.
  4. Remove bay leaf. Season with salt and pepper before serving.
