French Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup brown or green lentils, rinsed
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 8-10 minutes.
- Stir in rinsed lentils, vegetable broth, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 30-35 minutes, or until lentils are tender.
- Remove bay leaf. Season with salt and pepper before serving.
