When I’m seeking a sense of calm and a burst of fresh flavor, I always turn to falafel wraps. They’re light, satisfying, and make me feel grounded and happy.

Homemade Falafel Wraps with Tahini Sauce

45 minutes • Medium

Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 onion, chopped
  • 2 cloves garlic
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 2 tbsp flour
  • Oil for frying
  • Pita bread
  • Chopped lettuce, tomatoes, cucumber
  • Tahini sauce (store-bought or homemade)

Steps

  1. 1. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, and flour. Process until coarse but still chunky. Form into small patties.
  2. 2. Heat about 1 inch of oil in a skillet over medium-high heat. Fry falafel patties for 3-5 minutes per side, until golden brown and cooked through. Drain on paper towels.
  3. 3. Warm pita bread. Fill each pita with falafel patties, chopped lettuce, tomatoes, and cucumber.
  4. 4. Drizzle generously with tahini sauce. Serve immediately.
