Sometimes, I just need to indulge, and when that feeling strikes, a rich, creamy slice of cheesecake is my ultimate treat. It’s pure decadent happiness!

No-Bake Berry Swirl Cheesecake

20 minutes prep, 4 hours chill • Medium

Ingredients

  • 1.5 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup berry compote (store-bought or homemade)

Steps

  1. Mix graham cracker crumbs and melted butter. Press into the bottom of a 8-inch springform pan. Chill while preparing filling.
  2. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
  4. Spread half of the cheesecake mixture over the crust. Dollop berry compote, then swirl gently. Add remaining cheesecake mixture and swirl more compote on top. Chill for at least 4 hours, or overnight.
