No-Bake Berry Swirl Cheesecake
Ingredients
- 1.5 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/2 cup berry compote (store-bought or homemade)
Steps
- Mix graham cracker crumbs and melted butter. Press into the bottom of a 8-inch springform pan. Chill while preparing filling.
- In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
- Spread half of the cheesecake mixture over the crust. Dollop berry compote, then swirl gently. Add remaining cheesecake mixture and swirl more compote on top. Chill for at least 4 hours, or overnight.
