After a busy week, a quiet evening in with some homemade sushi makes me feel incredibly relaxed. The meticulous rolling is almost meditative, and the fresh flavors are so satisfying.

Simple California Rolls

45 minutes • Medium

Ingredients

  • 1 cup sushi rice, cooked and seasoned
  • 2 sheets nori
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 3 crab sticks (surimi), halved lengthwise
  • Soy sauce, pickled ginger, wasabi for serving

Steps

  1. Place a sheet of nori on a bamboo mat, shiny side down. Spread a thin, even layer of sushi rice over 2/3 of the nori, leaving a 1-inch strip bare at the top.
  2. Arrange avocado, cucumber, and crab sticks horizontally across the center of the rice.
  3. Starting from the bottom, roll the mat tightly, pressing firmly. Moisten the bare edge of the nori with water and seal the roll.
  4. Carefully slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce, pickled ginger, and wasabi.
