Comforting French Onion Soup

Ingredients

  • 3 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tsp sugar
  • 4 cups beef broth
  • 1/2 cup dry white wine or sherry
  • 4 slices baguette, toasted
  • 1 cup grated Gruyere cheese
  • Salt and pepper to taste

Steps

  1. In a large pot, melt butter over medium-low heat. Add sliced onions and sugar, cook slowly for 30-40 minutes until deeply caramelized.
  2. Stir in wine or sherry and cook for 2-3 minutes. Pour in beef broth, bring to a simmer, and cook for 15-20 minutes. Season with salt and pepper.
  3. Ladle soup into oven-safe bowls. Top each with a toasted baguette slice and a generous amount of Gruyere cheese.
  4. Broil for 2-3 minutes, or until the cheese is melted and bubbly. Serve immediately, being careful as bowls will be hot.
