On a cold evening, nothing beats a warm, hearty goulash. The rich paprika scent fills the kitchen and makes everything feel so cozy and comforting.

Hearty Beef Goulash

Ingredients

  • 2 tbsp olive oil
  • 1.5 lbs beef stew meat, cut into cubes
  • 2 large onions, sliced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds (optional)
  • 4 cups beef broth
  • Salt and pepper to taste

Steps

  1. Heat oil in a large Dutch oven over medium-high heat. Brown beef in batches, then remove.
  2. Add onions to the pot and cook until softened, about 8-10 minutes. Stir in paprika and caraway seeds, cook for 1 minute.
  3. Return beef to the pot. Add beef broth, salt, and pepper. Bring to a simmer, then reduce heat to low.
  4. Cover and cook for 2-2.5 hours, or until beef is fork-tender. Serve with egg noodles or crusty bread.
