There’s something so meditative about baking a fresh loaf of bread. The aroma filling the house and the simple process help me gather my thoughts and feel grounded.

No-Knead Artisan Bread

18 hours (mostly passive) • Easy

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 tsp salt
  • 1/2 tsp instant yeast
  • 1 1/2 cups warm water

Steps

  1. In a large bowl, combine flour, salt, and yeast. Add water and stir until a shaggy dough forms. Cover and let sit at room temperature for 12-18 hours.
  2. On a floured surface, gently fold the dough a few times. Place it on parchment paper, cover, and let rise for 30 minutes.
  3. Preheat oven to 450°F (230°C) with a Dutch oven inside. Carefully place dough into the hot Dutch oven. Bake covered for 30 minutes, then uncovered for 15-20 minutes, until crust is golden brown.
  4. Cool on a wire rack before slicing.
