Sunrise Breakfast Burrito

Ingredients

  • 4 large tortillas
  • 4 large eggs, scrambled
  • 1/2 cup black beans, rinsed
  • 1/4 cup salsa
  • 1/2 avocado, sliced
  • 1/4 cup shredded cheese

Steps

  1. Warm tortillas in a pan or microwave.
  2. Cook scrambled eggs.
  3. Assemble burritos: layer scrambled eggs, black beans, salsa, avocado, and cheese on each tortilla.
  4. Fold in sides, then roll up tightly.
  5. Serve immediately, perhaps with extra salsa.
