There are days when only true comfort food will do. A warm bowl of tomato soup with a gooey grilled cheese sandwich always makes me feel better.
Creamy Tomato Soup & Grilled Cheese
Ingredients
- Canned crushed tomatoes
- Chicken or vegetable broth
- Heavy cream
- Fresh basil
- White bread
- Cheddar cheese
- Butter
Steps
- For the soup: Simmer crushed tomatoes, broth, and torn basil leaves for 15 minutes. Blend until smooth, then stir in heavy cream.
- For the grilled cheese: Butter one side of two slices of bread. Place one slice butter-side down in a pan, top with cheddar cheese, then the second slice butter-side up.
- Grill over medium heat until golden brown on both sides and cheese is melted.
- Serve the hot soup with the grilled cheese sandwich on the side for dipping.
