Classic Comfort Chicken Noodle Soup
Ingredients
- 1 tbsp olive oil
- 1 cup cooked chicken, shredded
- 1 cup egg noodles
- 4 cups chicken broth
- 1 cup mixed vegetables (carrots, celery)
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot. Add mixed vegetables and sauté for 5 minutes until slightly tender.
- Pour in chicken broth and bring to a boil. Add egg noodles and cooked chicken.
- Reduce heat and simmer for 10-12 minutes, or until noodles are tender. Season with salt and pepper.
