Classic Comfort Chicken Noodle Soup

Ingredients

  • 1 tbsp olive oil
  • 1 cup cooked chicken, shredded
  • 1 cup egg noodles
  • 4 cups chicken broth
  • 1 cup mixed vegetables (carrots, celery)
  • Salt and pepper to taste

Steps

  1. Heat olive oil in a large pot. Add mixed vegetables and sauté for 5 minutes until slightly tender.
  2. Pour in chicken broth and bring to a boil. Add egg noodles and cooked chicken.
  3. Reduce heat and simmer for 10-12 minutes, or until noodles are tender. Season with salt and pepper.
  4. Serve warm.
