When I need true comfort food that reminds me of home, my mom’s Bobotie is always the answer. The sweet and savory flavors just wrap around me like a warm hug. It’s pure South African soul food.

Classic Bobotie

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 1 lb ground beef
  • 1 slice bread, soaked in 1/4 cup milk
  • 1 tbsp curry powder
  • 1 tbsp apricot jam
  • 2 eggs
  • 1 cup milk
  • Bay leaves

Steps

  1. Preheat oven to 350°F (175°C). Sauté onion in olive oil, then add ground beef and brown.
  2. Squeeze milk from bread and crumble into meat. Stir in curry powder and apricot jam. Cook 5 minutes.
  3. Press meat mixture into a baking dish. Whisk remaining milk with eggs and pour over meat.
  4. Arrange bay leaves on top. Bake for 40-45 minutes until custard is set and golden.
  5. Serve hot with yellow rice and chutney.
