Simple Stovetop Ratatouille

Ingredients

  • Eggplant
  • Zucchini
  • Bell peppers
  • Onion
  • Garlic
  • Canned crushed tomatoes
  • Herbs de Provence
  • Olive oil

Steps

  1. Sauté diced onion and minced garlic in olive oil.
  2. Add diced bell peppers, then eggplant and zucchini, cooking until slightly softened.
  3. Stir in canned crushed tomatoes and a generous sprinkle of Herbs de Provence.
  4. Simmer gently until vegetables are tender and flavors have melded, then serve.
