Every time I have shepherd’s pie, I’m reminded of my mum’s cooking and feel incredibly grateful. It’s a simple, hearty meal that always brings warmth to my heart and home.
Hearty Classic Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb or beef
- 1 onion, chopped
- 2 carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 4 large potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Steps
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet. Brown ground meat; drain fat. Add onion and carrots; cook until softened. Stir in peas, beef broth, and Worcestershire sauce. Simmer for 10 minutes until sauce thickens slightly.
- While meat mixture simmers, boil potatoes until very tender. Drain, then mash with milk, butter, salt, and pepper until smooth.
- Spread mashed potatoes evenly over the meat mixture in the skillet. Bake for 25-30 minutes, or until topping is golden brown and filling is bubbling.
