Zesty Mediterranean Couscous Salad
Ingredients
- 1 cup couscous
- 1.5 cups boiling water or vegetable broth
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper
Steps
- Place couscous in a bowl. Pour boiling water or broth over it, cover, and let sit for 5 minutes until liquid is absorbed. Fluff with a fork.
- Add diced cucumber, red bell pepper, mint, and parsley to the couscous.
- In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the couscous mixture and toss gently to combine. Serve chilled or at room temperature.
