After a long day, when I want something light and refreshing, a vibrant couscous salad is perfect. It always makes me feel revitalized and ready for the evening.

Zesty Mediterranean Couscous Salad

Ingredients

  • 1 cup couscous
  • 1.5 cups boiling water or vegetable broth
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper

Steps

  1. Place couscous in a bowl. Pour boiling water or broth over it, cover, and let sit for 5 minutes until liquid is absorbed. Fluff with a fork.
  2. Add diced cucumber, red bell pepper, mint, and parsley to the couscous.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over the couscous mixture and toss gently to combine. Serve chilled or at room temperature.
