Traditional Moroccan Harira Soup

Ingredients

  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1 cup cooked chickpeas
  • 1/2 cup brown lentils
  • 1 can (14.5 oz) crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup flour mixed with 1/2 cup water (for thickening)
  • Spices: turmeric, ginger, cinnamon, black pepper

Steps

  1. In a large pot, sauté onion in olive oil until soft. Add chickpeas, lentils, crushed tomatoes, broth, and spices. Bring to a boil, then reduce heat and simmer for 45 minutes.
  2. Add cilantro and parsley. Slowly whisk in the flour-water mixture, stirring constantly until the soup thickens to your desired consistency.
  3. Simmer for another 10-15 minutes, stirring occasionally. Serve hot, optionally with a squeeze of lemon.
