Hearty Middle Eastern Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin
- Salt and pepper to taste
- Lemon wedges for serving
