Hearty Middle Eastern Lentil Soup

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 tsp cumin
  • Salt and pepper to taste
  • Lemon wedges for serving

Steps

  1. 1. Heat olive oil in a large pot. Sauté onion and carrots until softened, about 5-7 minutes. Add garlic and cumin, cook for 1 minute more.
  2. 2. Stir in rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  3. 3. Season generously with salt and pepper. For a smoother texture, you can blend a portion of the soup.
  4. 4. Serve hot with a squeeze of fresh lemon juice.
