After a day of deep thought or when I’m just feeling reflective, a big pot of hearty chili con carne is my ideal meal. It’s comforting and robust, perfect for unwinding.

Classic Beef Chili con Carne

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed
  • 1/4 cup chili powder
  • 1 cup beef broth

Steps

  1. Heat olive oil in a large pot or Dutch oven. Brown ground beef; drain excess fat. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
  2. Add crushed tomatoes, kidney beans, black beans, chili powder, and beef broth. Stir to combine.
  3. Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, stirring occasionally, allowing flavors to meld.
  4. Serve hot with your favorite toppings like shredded cheese, sour cream, or cornbread.
