Classic Pavlova with Berries

1 hour 30 minutes (includes baking/cooling) • Medium

Ingredients

  • 4 large egg whites, room temperature
  • 1 cup superfine sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar
  • 1 cup heavy cream, whipped
  • Mixed berries for topping

Steps

  1. Preheat oven to 250°F (120°C). Beat egg whites until soft peaks form.
  2. Gradually add sugar, beating until stiff, glossy peaks form. Fold in cornstarch and vinegar.
  3. Spoon meringue onto parchment-lined baking sheet, shaping into a round with a slight dip in the center.
  4. Bake for 1 hour, then turn off oven and let cool completely inside with door ajar (about 1 hour).
  5. Top with whipped cream and fresh mixed berries before serving.
