When I’m feeling adventurous, I love to experiment in the kitchen with bold flavors, and a spicy Thai green curry always hits the spot. It’s a culinary journey in a bowl!

Quick Thai Green Curry

Ingredients

  • 1 tbsp coconut oil
  • 2 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup vegetable broth
  • 1 cup sliced chicken or tofu
  • 1 cup mixed vegetables (bell peppers, bamboo shoots)
  • Fresh basil leaves
  • Lime wedges for serving

Steps

  1. Heat coconut oil in a large pot. Add green curry paste and cook for 1 minute until fragrant.
  2. Stir in coconut milk and vegetable broth. Bring to a simmer.
  3. Add chicken (or tofu) and mixed vegetables. Cook for 10-15 minutes, until chicken is cooked through and vegetables are tender-crisp.
  4. Stir in fresh basil. Serve hot with rice and lime wedges.
