Quick Thai Green Curry
Ingredients
- 1 tbsp coconut oil
- 2 tbsp green curry paste
- 1 can (13.5 oz) coconut milk
- 1 cup vegetable broth
- 1 cup sliced chicken or tofu
- 1 cup mixed vegetables (bell peppers, bamboo shoots)
- Fresh basil leaves
- Lime wedges for serving
Steps
- Heat coconut oil in a large pot. Add green curry paste and cook for 1 minute until fragrant.
- Stir in coconut milk and vegetable broth. Bring to a simmer.
- Add chicken (or tofu) and mixed vegetables. Cook for 10-15 minutes, until chicken is cooked through and vegetables are tender-crisp.
- Stir in fresh basil. Serve hot with rice and lime wedges.
