Comforting French Onion Soup

Ingredients

  • 4 large yellow onions, thinly sliced
  • 4 tbsp butter
  • 1 tsp sugar
  • 6 cups beef broth
  • 1/2 cup dry white wine or sherry
  • Baguette slices, Gruyere cheese

Steps

  1. In a large pot, melt butter over medium-low heat. Add onions and sugar, cook slowly for 45-60 minutes until deeply caramelized.
  2. Stir in wine/sherry, scraping up browned bits. Add beef broth, bring to a simmer, and cook for 20 minutes.
  3. Preheat broiler. Ladle soup into oven-safe bowls. Top with baguette slices and Gruyere cheese.
  4. Broil until cheese is melted and bubbly.
