Vanilla Funfetti Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/4 cup sprinkles (for batter)
  • Vanilla buttercream frosting
  • Extra sprinkles for topping

Steps

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla extract.
  4. Alternately add dry ingredients and milk to the wet ingredients, beginning and ending with dry, mixing until just combined. Fold in 1/4 cup sprinkles.
  5. Divide batter among muffin cups. Bake for 18-22 minutes, or until a toothpick inserted comes out clean. Let cool completely. Frost with vanilla buttercream and add extra sprinkles.
