Zesty Lemon Bars
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup cold butter, cubed
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup fresh lemon juice
- Pinch of lemon zest
Steps
- Preheat oven to 350°F (175°C). For the crust, combine flour, powdered sugar, and butter. Press into an 8x8 inch baking pan and bake for 15-20 minutes until lightly golden.
- While crust bakes, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
- Pour the lemon mixture over the hot crust. Return to oven and bake for another 20-25 minutes, or until the filling is set.
- Cool completely before dusting with powdered sugar and cutting into bars.
