Creamy Tomato Soup with Crispy Grilled Cheese
Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 3 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 4 slices bread
- 2 slices cheddar cheese
- 2 tbsp butter
Steps
- 1. For soup: Sauté onion and garlic in olive oil. Add crushed tomatoes and broth, simmer for 15 minutes. Stir in cream, season, and blend until smooth.
- 2. For grilled cheese: Butter one side of each bread slice. Place cheese between unbuttered sides.
