Creamy Tomato Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cans (28 oz) crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Steps
- Sauté onion in olive oil until soft.
- Add crushed tomatoes and vegetable broth, bring to a simmer.
- Cook for 20 minutes, then blend until smooth.
- Stir in heavy cream, season with salt and pepper, and heat through.
