On a hot day when I need something refreshing, a chilled gazpacho is my absolute favorite. It’s vibrant, cool, and incredibly healthy.

Classic Spanish Gazpacho

20 minutes + 2 hours chilling • Easy

Ingredients

  • 4 ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1/4 red onion, chopped
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 cup cold water
  • Salt and pepper to taste

Steps

  1. Combine tomatoes, cucumber, bell pepper, red onion, and garlic in a blender.
  2. Add olive oil, red wine vinegar, and cold water. Blend until smooth.
  3. Season with salt and pepper to taste. For a smoother texture, you can strain it through a fine-mesh sieve.
  4. Chill in the refrigerator for at least 2 hours before serving. Garnish with chopped vegetables or croutons if desired.
