On a hot day when I need something refreshing, a chilled gazpacho is my absolute favorite. It’s vibrant, cool, and incredibly healthy.
Classic Spanish Gazpacho
Ingredients
- 4 ripe tomatoes, roughly chopped
- 1 cucumber, peeled and chopped
- 1/2 red bell pepper, chopped
- 1/4 red onion, chopped
- 1 clove garlic
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 cup cold water
- Salt and pepper to taste
Steps
- Combine tomatoes, cucumber, bell pepper, red onion, and garlic in a blender.
- Add olive oil, red wine vinegar, and cold water. Blend until smooth.
- Season with salt and pepper to taste. For a smoother texture, you can strain it through a fine-mesh sieve.
- Chill in the refrigerator for at least 2 hours before serving. Garnish with chopped vegetables or croutons if desired.
