Simple Pasta Aglio e Olio
Ingredients
- 8 oz spaghetti or linguine
- 4 cloves garlic, thinly sliced
- 1/4 cup olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Steps
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium-low heat. Add sliced garlic and red pepper flakes (if using); cook until garlic is fragrant and lightly golden, being careful not to burn.
- Add drained pasta to the skillet with the garlic oil. Toss well. Add reserved pasta water a tablespoon at a time until a light sauce forms.
- Stir in fresh parsley, season with salt and pepper. Serve immediately.
