Hearty Greek Lentil Soup (Fakes)
Ingredients
- 1 cup brown lentils, rinsed
- 6 cups water or vegetable broth
- 1/4 cup olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Steps
- Combine lentils and water/broth in a large pot, bring to a boil, then reduce heat and simmer for 20 minutes.
- In a separate pan, sauté onion, carrots, and garlic in olive oil until soft. Add to the simmering lentils.
- Continue to simmer for another 20-25 minutes until lentils are tender. Stir in red wine vinegar, salt, and pepper. Serve with a drizzle of olive oil.
