Hearty Greek Lentil Soup (Fakes)

Ingredients

  • 1 cup brown lentils, rinsed
  • 6 cups water or vegetable broth
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Steps

  1. Combine lentils and water/broth in a large pot, bring to a boil, then reduce heat and simmer for 20 minutes.
  2. In a separate pan, sauté onion, carrots, and garlic in olive oil until soft. Add to the simmering lentils.
  3. Continue to simmer for another 20-25 minutes until lentils are tender. Stir in red wine vinegar, salt, and pepper. Serve with a drizzle of olive oil.
