When there’s something to celebrate, my family tradition is to make a big, glorious pan of paella. The vibrant colors and rich flavors just scream festivity!

Seafood Paella

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup bomba rice
  • 4 cups chicken broth
  • 1/2 tsp saffron threads
  • 1/2 lb shrimp
  • 1/2 lb mussels
  • 1/2 cup peas
  • Lemon wedges

Steps

  1. Heat olive oil in a paella pan. Sauté onion, bell pepper, and garlic. Add rice and stir.
  2. Pour in broth with saffron. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Add shrimp and mussels, arranging them on top. Cover and cook for another 10-15 minutes until liquid is absorbed and seafood is cooked.
  4. Stir in peas, cover again for a few minutes. Serve with lemon wedges.
