Fresh Lime Ceviche

30 minutes (plus marination) • Easy

Ingredients

  • 1 lb firm white fish (cod or tilapia), diced
  • 1 cup fresh lime juice
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1 aji amarillo pepper, minced

Steps

  1. Place diced fish in a non-reactive bowl.
  2. Pour fresh lime juice over the fish, ensuring it's fully submerged. Marinate for 15-20 minutes until opaque.
  3. Drain most of the lime juice, then stir in sliced red onion, chopped cilantro, and minced aji amarillo.
  4. Serve immediately, perhaps with sweet potato or corn.
