After a really stressful week at work, my go-to comfort food is a hearty plate of spaghetti carbonara. The creamy sauce and crispy pancetta just melt away all my worries, even for a little while.
Quick Weeknight Carbonara
Ingredients
- 200g spaghetti
- 100g pancetta or bacon
- 2 large eggs
- 50g grated Pecorino Romano cheese
- Freshly ground black pepper
- Salt to taste
Steps
- Cook spaghetti according to package directions.
- While pasta cooks, crisp pancetta in a pan.
- Whisk eggs, cheese, and pepper in a bowl. Drain pasta, reserving some pasta water.
- Add hot pasta to the pancetta pan, remove from heat. Quickly stir in egg mixture and a splash of pasta water until creamy. Serve immediately.
