After a long, stressful week at work, there’s nothing I crave more than a hearty bowl of ramen. It’s my ultimate comfort food and helps me unwind completely.

Quick Miso Ramen

25 minutes • Easy

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tbsp miso paste
  • 2 servings ramen noodles
  • 1 cup sliced cooked chicken or pork
  • 1 soft-boiled egg, halved
  • Chopped green onions for garnish

Steps

  1. Bring broth to a simmer in a saucepan.
  2. Whisk in miso paste until dissolved.
  3. Cook ramen noodles according to package instructions. Drain well.
  4. Divide noodles into two bowls, pour hot broth over them, and top with chicken/pork, egg, and green onions.
