When I need a burst of energy and flavor, I whip up a spicy chicken stir-fry. It’s quick, vibrant, and always gets me going!
Zesty Chicken Stir-fry
Ingredients
- 1 lb boneless, skinless chicken breast, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 red bell pepper, sliced
- 1 head broccoli, chopped
- 1/2 cup stir-fry sauce (store-bought or homemade)
- Cooked rice for serving
Steps
- Marinate chicken in 1 tbsp soy sauce and sesame oil for 10 minutes.
- Heat a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken.
- Add bell pepper and broccoli to the pan, stir-fry for 3-5 minutes until tender-crisp.
- Return chicken to the pan. Pour in stir-fry sauce and remaining soy sauce, toss to coat. Serve immediately over rice.
