Fiery Chicken Curry

Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • Chili flakes (optional)

Steps

  1. Sauté onion and garlic until soft.
  2. Add chicken and cook until browned.
  3. Stir in curry powder, then diced tomatoes and coconut milk.
  4. Simmer for 20-25 minutes until chicken is cooked through.
  5. Add chili flakes if desired, serve with rice.
