Hearty Red Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin
- Salt and pepper
Steps
- Heat olive oil in a large pot. Sauté onion and carrots until softened, about 5-7 minutes.
- Add rinsed lentils, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Season with salt and pepper to taste. Serve warm.
