When I’m feeling a bit adventurous and want to try something new, I always crave the vibrant flavors of Pad Thai. It’s an exciting dish that never disappoints!

Quick Chicken Pad Thai

Ingredients

  • 8 oz flat rice noodles
  • 2 tbsp oil
  • 8 oz chicken breast, sliced
  • 2 eggs, scrambled
  • 1/4 cup Pad Thai sauce
  • Bean sprouts, chopped peanuts, lime wedges

Steps

  1. Cook rice noodles according to package directions, rinse with cold water, and set aside.
  2. Heat oil in a large skillet or wok. Add chicken and cook until browned. Push to one side.
  3. Add scrambled eggs to the other side and cook until set. Combine with chicken.
  4. Add cooked noodles and Pad Thai sauce to the skillet. Toss everything together until well combined. Stir in some bean sprouts. Serve with chopped peanuts and lime wedges.
