Classic Seafood Paella
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- Pinch of saffron threads
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb mussels or clams, scrubbed
- 1/4 cup frozen peas
- Lemon wedges for serving
Steps
- Heat olive oil in a large paella pan or wide skillet. Sauté onion, garlic, and bell pepper until softened.
- Stir in rice and cook for 2 minutes, ensuring grains are coated.
- Pour in broth and saffron threads. Bring to a simmer, spreading rice evenly. Do not stir. Cook for 15 minutes.
- Arrange shrimp, mussels/clams, and peas over the rice. Cover and cook for another 10-15 minutes, or until rice is tender and seafood is cooked through. Let rest for 5 minutes before serving with lemon wedges.
