When I’m feeling adventurous, I love trying to recreate dishes from around the world. Thai green curry is one of my favorites – the vibrant flavors always take me on a culinary journey!

Vegetarian Thai Green Curry

30 minutes • Medium

Ingredients

  • 1 tbsp coconut oil
  • 2 tbsp green curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup vegetable broth
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup bamboo shoots
  • 1 tbsp fish sauce (or soy sauce for vegan)
  • 1 tbsp brown sugar
  • Fresh basil and jasmine rice for serving

Steps

  1. Heat coconut oil in a large pot. Add curry paste and cook for 1 minute until fragrant.
  2. Stir in coconut milk and vegetable broth. Bring to a simmer.
  3. Add bell pepper, broccoli, and bamboo shoots. Cook for 10-15 minutes, until vegetables are tender-crisp.
  4. Stir in fish sauce/soy sauce and brown sugar. Taste and adjust seasoning.
  5. Serve hot over jasmine rice, garnished with fresh basil.
