When I’m feeling adventurous, I love trying to recreate dishes from around the world. Thai green curry is one of my favorites – the vibrant flavors always take me on a culinary journey!
Vegetarian Thai Green Curry
Ingredients
- 1 tbsp coconut oil
- 2 tbsp green curry paste
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup vegetable broth
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup bamboo shoots
- 1 tbsp fish sauce (or soy sauce for vegan)
- 1 tbsp brown sugar
- Fresh basil and jasmine rice for serving
Steps
- Heat coconut oil in a large pot. Add curry paste and cook for 1 minute until fragrant.
- Stir in coconut milk and vegetable broth. Bring to a simmer.
- Add bell pepper, broccoli, and bamboo shoots. Cook for 10-15 minutes, until vegetables are tender-crisp.
- Stir in fish sauce/soy sauce and brown sugar. Taste and adjust seasoning.
- Serve hot over jasmine rice, garnished with fresh basil.
