Sometimes I just need a culinary adventure, and a fiery Thai Green Curry always hits the spot. It’s a wonderful explosion of flavors that transports me.

Fiery Thai Green Curry

Ingredients

  • 1 tbsp coconut oil
  • 2 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup chicken or vegetable broth
  • 1 lb chicken breast or firm tofu, sliced
  • 1 cup mixed vegetables (e.g., bell peppers, bamboo shoots)
  • Fish sauce or soy sauce to taste
  • Fresh cilantro and lime wedges for garnish

Steps

  1. Heat coconut oil in a large pot or wok over medium heat. Add green curry paste and cook for 1 minute until fragrant.
  2. Stir in coconut milk and broth, bring to a simmer. Add chicken or tofu and vegetables.
  3. Cook for 10-15 minutes, or until chicken is cooked through and vegetables are tender. Season with fish sauce or soy sauce.
  4. Serve hot with rice, garnished with fresh cilantro and lime wedges.
